We couldn't get into the leftovers fast enough this morning. During our family's communal "group-spoon" into the sweet potato casserole (a nutritious and delicious breakfast!), I checked out Thanksgiving leftovers with dinner plans in mind. This resulted in the following ingredients getting tossed into the crockpot to cook on the low setting all day today:
- boxed chicken stock (I like Pacific brand Organic Free Range)
- steamed carrots and broccoli (about 2 cups)
- diced potatoes (about 3 cups)
- garlic mashed potatoes (2+ cups)
- gravy (about ½ cup...note to self: make a lot more next year)
- 4 small onions sautéed in a little olive oil
- generous tablespoon of oregano
- water to cover
Easiest soup I ever made.
