This is what we did while the babies napped:

That is: Banana cream pie, coconut cream pie (using up a freezer stock of coconut), 5 pints of apple sauce, 10 quarts of smoked green tomato salsa, banana muffins (from bananas destined for the grocers garbage) and two local lasagnas with swiss chard and sausage. YUM!
SMOKED green tomato salsa? I never heard of it, but it sounds wonderful. Next weekend I give up on covering tomatoes every night and oncovering on warm days to ripen them. There will be lots of green tomatoes. Could you share your recipe? I just made Cher's Farm Journal Tomato Butter recipe and it was great! So are Autumn's dill pickled peppers. I plan on trying Autumn's Hot Pepper Mustard too. You are all inspiring me to new heights with my end of season produce.

Well for the smoked part, Brendan was already smoking a pork shoulder, so he threw all the green tomatoes into the offset smoker, said something about Maillard reactions and sugar caramelization. The recipe is the same recipe as always: no recipe, just tasste. Throw onions, peppers, chiles, tomatoes and garlic into the food processor. Add herbs like cilantro or marjoram, salt, pepper and other spices like cumin to taste. You know what you want out of a salsa, so you determine the balance between the smoky tart green tomatoes, ripe tomatoes and all the other components. The only thing I can tell you is what my husband says: "recipes are for suckers, or smokers who can't taste their food." Good Luck!
