We spent the weekend making pies. It is kind of a funny thing because we are not the type of people to fuss with meals and make things pretty. But... the ingredients called for delicious, wonderful pie.
The first was a cheese and arugula pie. This was made for baby at the last moment because we realized that the Napa cabbage slaw probably wasn't a great food for babies. The pie (torte really) was a great solution for baby, and a vegetarian solution that Brendan eats. It is darn tasty and is a perfect breakfast food on the go. As far as i know, crust w/ some rosemary, arugula, good melting cheese and eggs to bind and away you go. It is loosely based on a recipe from The Silver Spoon cookbook, but those cheeses could not be had locally.
The second pie is a no brainier - Strawberry. Not only could we find local strawberries, but we could find local too-ripe-to-sell-at-a-great-price strawberries. Aren't we spoiled? It turns out that we were able to buy a bunch of these strawberries and many were a-ok for the week. I have to admit that baby got a huge bounty because it is impossible to resist positively responding to baby sign language. I have never imagined that the sign for more could touch me as much as it did on Sunday. "more" "eat" over and over and over again.
I think the most fun about eating locally right now is the diversity of meals. I keep getting questions... you can't eat that can you? Well yes, yes I can! There are so many options that it is amazing to think about a time when we worried about what to eat for dinner!
