The thing with doing this local food spiel I have found, is you are either swimming in a type of food or there is a drought. I feel a lot like the Midwest's weather right now. I am up to my eyeballs in strawberries, rhubarb and greens right now. The strawberries are what concern me (who thought I would be concerned about strawberries less than two weeks ago). I have an ice cream bucket full in the fridge, plus some, and I need to start doing something with them fast. I have more ripening each day, and I am foolishly delaying harvest. The kids have already gorged themselves on the fresh version, so I can't count on them to take out large amounts anymore.
Of course the issue is time. I don't have enough time to blog, much less preserve this food. I feel totally under pressure-I have no excuse to not have strawberries in December. My plans for canning aren't going to be happening anytime soon, so I am going to have to dive in and start freezing the strawberries in batches. This should be a no brainer, but we have limited freezer space, so I need to be careful. Especially as I know this is going to happen again in future with beans, peas, tomatoes, spinach (again), etc.

How about trying to dehydrate (dry) some? I have about put up as much as I can in either freezer jam or frozen so my next batch I thought that I would try using my dehydrator on them - here is an article that discusses it. Just takes a bit of time to slice them up but after that let the dehydrator do the work....
