This thought always stumps me. I have all of these high hopes for impressive appetizers and then reality sets in and I just don't have time to mess with making all these little snacks. Baby on board gets so excited at any food smells, so whatever I do make, it has to be fast. The first baby isn't much more help, pounding away on the pots and pans only lasts for 10 minutes max.
So, while my dinner party offerings slow down, friends are picking up. Kassie and CJ came over for home brew and appetizers. For that evening, they took up the challenge of eating locally and managed to bring two of my absolute favorite party foods! One is a guilty pleasure that Brendan makes fun of me for making: pickles with cream cheese and meat. The other was deviled eggs. Seriously, who doesn't love those?! Eggs are easy to find locally, and the condiments can be made.

Both of these appetizers are great examples of foods that are completely reasonable for a local food diet. The pickle appetizer (try it, seriously) involves homemade pickles, cream cheese from WI and local salami from MN. Combine these and you have yourself a tasty meal. It is always fun to hear what others will do with the same ingredient restrictions. Instead of looking at it as a pain, just think of it as an iron chef competition. That will get your creativity flowing!
Photo credit goes to Kassie. She is much more practiced at photographing her meals. I simply can't quite manage to remember before the meal is eaten. Oh well.
Sareen, I love the idea of salami- and cream cheese-wrapped pickles! My family has a similar favorite appetizer, except with green onions, cream cheese, and ham. I'm going to have to crack open a jar of dill pickles and try your version. Yum!

Give them a try, if you are a pickle fan, it is an awesome stand-by snack. I cannot get enough of these!!
