Blessed are the... bread makers?

I keep reading about these people making bread. I mean, Vera talks about making bread every day. Every time I read that I think, "good for her" or something equally non-committal. I mean who really has time to make bread daily?

All of that disbelief was until I took up the bread recipe that I am sure you have already heard about. This is a no kneed bread from the New York Times. This recipe has been recommended to me more than once, so I understand if you don't take up making it the first time. But trust me, nothing can be easier or look more impressive. This was actually easier than the dreaded bread machine collecting dust in my basement.

bread.jpgAdd flour, yeast, water and mix. Wait for 18 hours. Fold twice, wait 2 hours. Bake. After all of that exhausting work you get:

I had to bake mine at work because I could not wait any longer to try it. Now I have an entire host of new friends interested in trying the bread. I don't think it will even make it home for the husband to eat. Guess I will just have to slave over another loaf. Too bad! Thanks for everyone who kept telling me to make this bread, it goes well with my $5.00 butter.

Hmm.. I have the time to make bread every day (I'm a grad student!) but I don't have the appetite. Making bread the 'old fashioned way' doesn't actually require that much effort, and to me it's worth having the finished product the same evening that you start to make it.

YMMV, as they say.

I have found the waiting bit to be a huge hindrance when I crave the bread pronto. But, with my minuscule attention span, I am sure that even making it the traditional way wouldn't satisfy my instant hankering for warm bread.

I plan to migrate into real bread someday soon. For now, Fresh bread will be rolling out Thursday and Sunday. I have people coming over and it looks too darn nice to muck with anything new at this point! Any bread recipe you can't live without?
