Changes?

I have not noticed that my view of food has changed per se......but apparently I had a nice little addiction to luxury foods from other countries. No more strange little French cheeses, mustards, cornichons, Greek olives, artichoke hearts, coconut milk, ginger........large poblano peppers waiting to be stuffed with a tasty mixture of millet, cheese and Muir Glen fire roasted tomatoes with jalapenos......hmmm.

I have noticed a change in the way we eat and shop in a big way. Even though things are not necessarily cheaper we seem to be spending a lot less on food.....because the glaring fact of the matter is that if we really ate only what is locally available we would live on sweet potatoes, greens, eggs and milk......oh yeah, we found some local meat. So we are working our way through what we have in the pantry, and apparently we had way more than I thought we did. We eat A LOT of dried beans and rice. We have collards or mustard greens in fritattas and quiches and sauteed over pasta.......I discovered that cooking greens in boiling water and then plunging them into ice water really does highlight the deliciousness of vegetables, I usually have to discourage people from eating all the veggies before they get to the table. I discovered that if you only have spinach leaf salad that eventually even Sasha will eat it.....that has not worked with the sweet potatoes. My refrigerator is mostly empty. I cheat and buy apples and corn and celery and carrots........does any one else feel guilty?

Dear Mary,

I actually did read you kind message and commented on it a while ago....we are meeting new people but none of them have potatoes or onions :). I am hoping to get over to the county extension office soon, my gardening skills have not been very successful in the past couple of years, I will let you know if there is improvement.
