Delivery Day Part Two

I was able to make lunch much more exciting today, a Friday of Lent, since we received a delivery of cheeses from the coop. We got Basil and Sun Dried Tomato cheddars, Dill cheddar and mozzarella. The children were most appreciative.

We also purchased yogurt cheese which is a wonderful and lower calorie alternative to sour cream. It can also be used in making cheese cake. We like to dollop it on toast over the lemon marmalade we made this summer from my brother's lemon trees in California. It adds great taste and moisture to cornbread and cakes, too.

We took home some arugula which is great for perking up a winter salad or soup. A little goes a long way! The bag of Italian leaf parsley looked especially good: fresh picked, very tasty. I like to put it in salads or topping a bowl of potato, mushroom, or leek soup.

A mixture of freshly picked Oriental greens rounded out the order for this month. The greens included : Mizuna, Komatsuna, mustards, tahtsoi, and pak choy. I will use these in stir-fry, soups & stews, and fresh in salads. The mustards are good with sandwich meats. The Komatsuna leaves can also be used to wrap spring rolls. The stems can be used like celery in a raw vegetable tray.

The greens will be gone in a few meals. I'll have to keep searching for a local source for those other three weeks before the next delivery day.

Another great source is the OSU-OKC farmers market, which operates all year long every Saturday morning. Margie from Nelson Nursery has ~17 types of greens each week.
